The worldwide unique specialty Ruster Ausbruch is a quality appellation wine which is exclusively made of overripe or noble rotten, naturally dried grapes. The renowned sweet wine is exceptional due to its fruitiness, sweetness, well balanced acidity and of course its Botrytys note.
Responsible the autumnal mists the Lake Neusiedl plays a vital role for the viticulture of the sweet Ruster Ausbruch. On warm, humid days in October the noble rot fungus Botrytis cinerea penetrates the skin of the grapes and alters the consistence of the pulp. The grapes wither and shrink raisins like while inside in contrast to simple evaporation through air drying, complex biochemical transformation processes take place.

As a result, the concentration of sugar and typical taste and aroma substances increases in the dried grapes. As the grapes are not evenly afflicted by Botrytys, they must be manually picked one by one and the best suited selected for the wine making.
